How much do want to spend... 
My upholstery guy back in Colorado was going to redo the Sleekcraft (typical jet boat interior, but not engine cover )before I moved and we were looking at around 1200 - 1500 to completely re-upholster and re-build the seats, cover the side walls and engine gaurd.  That was using a heavy grade vinyl and new foam.  The estimate also was with french seams (i.e. double re-inforced, no welt) and some patern work as well.
A simple interior will be less, but as soon as you want embroidery, paterns, different seams, and fabrics then the price goes up.  A show quality job will easily be three or four times per seat more.
